Area of Origin: Terontola in the municipality of Cortona and Vernazzano in the municipality of Tuoro sul Trasimeno. Olive groves located on medium-textured soils, well exposed and located at an altitude of about 300 meters above sea level.
Grinding: mechanical and by hand in the months of October and November; mechanical crushing and hammers, extraction with continuous integral cold system.
Cultivation: Frantoio, Leccino and Moraiolo.
Color: Straw yellow with golden reflections.
Smell: Wide fruity hints of olive and fresh grass.
Taste: Delicately fruity with notes of aromatic herbs that close in a subtle sweet almond.
Food matches: All-round, raw on minestrone, cooked and raw vegetables, in pinzimonio, in salads, on bruschetta, roasted fish, grilled and roasted meats, steamed or grilled vegetables, in fries.
